Low Sugar Chocolate Chip Cookies
I love a good home made chocolate chip cookie, especially if it is low in sugar. I have never cared much for sugary cookies, because then you can’t eat as many of them because the sugar rush hits too quick. These cookies are sweetened just enough to satisfy that cookie craving. The addition of unsulphured blackstrap molasses gives the recipe a more rich flavor without adding too much sweetness.
This dessert is chewy and fluffy; somewhat like a cross between cake and cookie. The recipe is quick to make, thanks to the Vitamix blender. The best part about these chocolate chip cookies is they are a great for when you want to have cookies and not derail your healing efforts. They’re naturally sweetened with dates, flax seeds replace the egg, and uses alkaline diet friendly spelt flour. To make the cookies dairy free make sure to use a dairy free chocolate chip, check your grocery store for these because shipping to warm climate areas may result in a big block of chocolate once they finally reach your doorstep. The recipe makes approximately 12 cookies.

Ingredients:
Combined in blender:
- ½ cup coconut oil
- 3/4-1 cup pitted dates (the dates amount can be varied slightly)
- 1T flax seed
- ¾ cup filtered water
- ½ tsp vanilla extract
- 1 tsp unsulphured blackstrap molasses
- 1/3 tsp unfiltered sea salt
Combined in mixing bowl:
- 2 cups spelt flour
- 1/3 tsp baking soda
- ¾ cup chocolate chips
Directions:
Preheat oven to 325˚F.
In a mixing bowl, combine flour, baking soda, and chips. Using a blender, blend until creamy; coconut oil, dates, flax, water, vanilla, molasses, and salt. Transfer to a small bowl and place in the fridge to allow it to cool a bit or it will melt the chocolate chips when adding to the flour mix. Add liquid ingredients to dry and mix. Scoop medium size dollops of dough, place dough on parchment paper lined cookie baking sheet. Bake for 8-10 minutes at 325˚F.
