Alkaline Diet Kale Basil Salad Recipe

 

Kale Basil Salad

Serves 3-4

Salad Ingredients:

  • 4 cups English Cucumber, chopped
  • 2 cups Grape Tomatoes
  • 3 Avocados, diced
  • 10 Kale Leaves, save stems for dressing
  • ¼ cup fresh Basil, diced
  • ¼ cup fresh Parsley, diced
  • ¼ cup Green Onion, diced
  • ¼ cup Sweet Onion, diced
  • Salt and Pepper to taste
  • Splash of Apple Cider Vinegar for Kale

 

Dressing Ingredients:

  • 1 Lemon
  • Kale leaf stems
  • 1 Garlic Clove

 

Directions:

Remove kale leaves from stems, chop leaves and massage with apple cider vinegar and salt in a small mixing bowl. Chop remaining salad ingredients and toss into large mixing bowl. Using a juicer; juice garlic, lemon, and kale stems, pour over chopped cucumber and other ingredients, add salt and toss. To serve, place kale on plate and top with chopped vegetables, sprinkle pepper to taste.
