Hemp Avocado Tomato Toast Recipe
Would you believe me if I told you that this is my first time eating avocado toast? It’s true, I’ve never made a formal avocado toast before. Today when I restocked on groceries, there was an incredible sale on avocado at Kroger which led to me taking the trendy plunge. Thank you so much avocado farmers!
The fun part about this meal is the ingredients make a new name HAT – Hemp Avocado Tomato, a twist on the classic BLT with a topping of healthy.
While I was picking out which avocados I would bring home, and doing my best to resist buying all 200 of them, I had a fun conversation with the lady next to me who was also just as excited to get them on sale.
She told me that her favorite thing to do with avocado is toss them on top of a salad. She also told me that she loves avocado toast, and how it’s “in” right now. Seeing how her face lit up just talking about avocado toast, I had to go home and make that for lunch.
Before I left the store, I grabbed a loaf of Ezekiel bread from the freezer section and some unsalted butter to make the toast. I love the variety of fats and vitamins that this meal offers. They’re all very good vision, brain, and gut building nutrients.
This was also my first time, in a long while, using Ezekiel bread. I had tried it before, and didn’t care for the texture. Now that I have given it another shot, it’s pretty good. I think that the first go was a bust and that the bread must have spent too much time in the freezer. So if you’ve bought a loaf before that wasn’t what you expected, give it a try again!
How to Make Avocado Toast
At home I toasted the bread in a stainless steel pan with a bit of unsalted butter. While that toasted I mashed a whole avocado with lemon juice, unfiltered sea salt, and black pepper all to taste. Once the toast finished I assembled the meal with a layer of avocado coleslaw that I had previously prepared (the recipe is in my free 10-day menu), covered it with a layer of the mashed avocado, and topped with sliced grape tomatoes.
Another variation is just toast, mashed avocado, and hemp hearts sprinkled on top, with or without tomatoes. What I really love about this meal is that it is incredibly health giving and extremely simple to make. Plus it’s comfort food with a topping of health.

I really didn’t expect it to be received well by other members of my family, sometimes they’re very suspicious of my healthy concoctions. Especially if I alter bread in anyway, and even more so when I sprinkle hemp hearts on things; but I just keep doing it because it’s good stuff and eventually they come around. To my delight, this meal was hands down their favorite! There was a chorus of mmmmmm’s, and requests to please make it again. Which I will gladly do!
