Instant Pot RV Kitchen

I designed this recipe to be cooked in the Instant Pot, but a stove top and skillet will work just fine. I am currently living full time in an RV to make traveling easier, and if you are as well the IP is a bit of a necessity.

However, I really suggest you consider getting an Instant Pot regardless of your lifestyle because they truly are all they’re hyped up to be. My favorite aspect of the Instant Pot is the speed of cooking, if you need a meal finished quickly you’ll be able to do that! If you boil eggs, using the IP for only that is enough justification to purchase one. I used to despise boiling eggs and peeling them because half of the white always came off with the shell. Now I can peel perfect eggs to make pickled eggs every time.

Alkaline Diet Meal Prep and Leftovers.

This style of meal is one that tastes even better as leftovers. The first time that I made this meal, it tasted amazing. Then the next day when I ate the leftovers I was impressed again because the flavors tasted better than when it was fresh cooked!

If you plan ahead, cook the spice portion of the recipe the day before to allow the flavors to blend together well. When you’re ready to make the meal cook the rest of the ingredients and add the spice blend then. Or make the whole batch and portion it out for the next few days meals if you like to meal prep. If you are following the Alkaline Diet, Wahls Protocol, AIP Diet, Paleo Diet, or Vegetarian/Vegan this recipe can be applied to each of those diet protocols. The only thing that may need to be omitted is the black pepper and cayenne pepper for those that avoid nightshade vegetables.

How to Prepare a Curry Spice Dish.

In curry recipes the blend of various spices and ingredients can appear intimidating because, boy is that list long! But don’t check-out yet, it takes no extra knowledge of cooking this style of meal than any skillet style dish. There is one extra step of putting your blend of spices together, that’s it. So don’t let this recipe intimidate you, give it a try and impress yourself and anyone else you serve it to. The ingredients and directions for this curry inspired recipe are written in cooking order, just check each off as you go down the list. At the end, you’ll have an impressive flavorful meal.

Several of the spices that I used in this meal are purchased from Aldi or Kroger, they have a nice collection of organic dried spices. The rest, pink Himalayan salt and ground turmeric, I ordered from Amazon.

To serve the meal plate your desired portion of each vegetable and spice blend, then stir together. Keeping the spices separate allows you to adjust for those with tender palates. Or, toss all of the ingredients together and dig in!

Simple Cauliflower Curry Spice Vegetables Dinner

  • 3 cups, cauliflower, diced small
  • 2 cups carrot, diced small
  • 2 cups mushrooms, diced small
  • 1 cup red onion, diced small
  • 3 garlic cloves, minced
  • 1tbsp fresh ginger root, minced
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/8tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground cayenne pepper
  • 1 tsp fine pink Himalayan salt
  • 3-4 tbsp cold-pressed coconut oil
  • 3 cups collard greens, diced small
  • Splash of spring water

  1. This meal is cooked in stages by cooking one vegetable at a time to ensure proper cooked texture, it is a quick process with the Instant Pot. Have a glass baking dish or other large serving dish to place each cooked vegetable in. I use the glass baking dish because it comes with a lid for easy left overs storage in the refrigerator.
  2. Begin by dicing all vegetables; cauliflower, mushroom, carrot, collard greens, onion, garlic, ginger root.
  3. First cook cauliflower in Instant Pot on more (high) setting saute with 1 tbsp coconut oil until slightly browned on bits and remove from the pot.
  4. Next add into the Instant Pot 1 tbsp coconut oil and chopped carrot, cook until slightly browned and remove from the pot.
  5. Add 1 tbsp coconut oil into the Instant Pot and diced mushrooms and turn down the saute temperature to Less (low), cook the mushrooms until softened and remove from the pot.
  6. Turn the Instant Pot back up to More (high) saute setting and cook the red onion, garlic, ginger root, and spices, with 1-2 tbsp coconut oil adding a splash of water if the mixture dries out.
  7. Remove onions and spices from pot and begin cooking the collard green stems with coconut oil and add a splash of water to pull up spice bits from the pot. Once the stems are soft and chopped, toss in collard green leaves and cook very lightly then remove from the pot.
  8. To serve add a desired portion of each vegetable and onion spice blend to your bowl and toss together. Or toss all cooked ingredients together and serve. Enjoy!
