Curry inspired dishes are a style of meals that are almost impossible to grow bored with. This recipe is curry spice inspired and full of nutrient dense vegetables. These are the perfect meals to turn to when you’re in a meal planning rut. Curry spices and flavors can make you feel like a professional restaurant chef; and even though the ingredient list is long, they’re not difficult to prepare! I like to chop each vegetable into small bite-sized pieces, or you could pulse them in a food processor if you have one.
Instant Pot RV Kitchen
I designed this recipe to be cooked in the Instant Pot, but a stove top and skillet will work just fine. I am currently living full time in an RV to make traveling easier, and if you are as well the IP is a bit of a necessity.
However, I really suggest you consider getting an Instant Pot regardless of your lifestyle because they truly are all they’re hyped up to be. My favorite aspect of the Instant Pot is the speed of cooking, if you need a meal finished quickly you’ll be able to do that! If you boil eggs, using the IP for only that is enough justification to purchase one. I used to despise boiling eggs and peeling them because half of the white always came off with the shell. Now I can peel perfect eggs to make pickled eggs every time.
Alkaline Diet Meal Prep and Leftovers.
This style of meal is one that tastes even better as leftovers. The first time that I made this meal, it tasted amazing. Then the next day when I ate the leftovers I was impressed again because the flavors tasted better than when it was fresh cooked!
If you plan ahead, cook the spice portion of the recipe the day before to allow the flavors to blend together well. When you’re ready to make the meal cook the rest of the ingredients and add the spice blend then. Or make the whole batch and portion it out for the next few days meals if you like to meal prep. If you are following the Alkaline Diet, Wahls Protocol, AIP Diet, Paleo Diet, or Vegetarian/Vegan this recipe can be applied to each of those diet protocols. The only thing that may need to be omitted is the black pepper and cayenne pepper for those that avoid nightshade vegetables.
How to Prepare a Curry Spice Dish.
In curry recipes the blend of various spices and ingredients can appear intimidating because, boy is that list long! But don’t check-out yet, it takes no extra knowledge of cooking this style of meal than any skillet style dish. There is one extra step of putting your blend of spices together, that’s it. So don’t let this recipe intimidate you, give it a try and impress yourself and anyone else you serve it to. Several of the spices that I used in this meal are purchased from Aldi or Kroger, they have a nice collection of organic dried spices. The rest, pink Himalayan salt and ground turmeric, I ordered from Amazon.
To serve the meal plate your desired portion of each vegetable and spice blend, then stir together. Keeping the spices separate allows you to adjust for those with tender palates. Or, toss all of the ingredients together and dig in!
