Easy Dinner Salad.
Don’t over think healthy! This salad is versatile. It can be paired with dinner, or made as a large serving to be dinner. I typically have this salad several times per week. It is my go-to recipe for what to make for dinner, when I don’t know what to make for dinner.
Most of the ingredients are something that you may already have on-hand. It is very quick to throw together; and because it contains two ingredients that are complete proteins, it is a complete meal on it’s own.
This meal is so simple to make. To begin, juice the lemon and toss it with diced avocado to give a more creamy texture. Next, chop all of the bulky vegetables; tomato, cucumber, what ever you like to add. Tear or chop the leaves of lettuce into bite size pieces and wash those. Then in a large bowl toss together the avocado, chopped vegetables and lettuce, salt and pepper to taste. When you serve the salad, top with hemp hearts. Your meal is finished! Easiest healthy meal, ever. This is why I have this salad so often, it makes eating healthy practical.
